Glutono-δ-lactone (GDL) is a naturally occurring lactone derived from glucose. It appears as a white crystalline powder and slowly hydrolyzes to gluconic acid in water, acting as a mild acidulant, pH regulator, and sequestrant.
GDL is widely used in the food industry to improve texture, control acidity, and extend shelf life. Its gradual acidification property makes it ideal for applications where controlled pH reduction is needed, such as tofu production, dairy products, and processed foods.
